Chicken Pasta for 2

Easy 2-Serving Chicken Pasta: 30 minutes total

All Organic Ingredients:

2 Chicken Breasts (about one pound)

EV Olive Oil

Sea Salt, All Purpose Seasoning

Lemon

Garlic Clove

Chicken Broth

Tomato or grape tomatoes

Fresh basil leaves

Finely shredded parmesan or the like

Black Olives (optional)

Pasta (your choice)

To Prepare:

Wash & place chicken in baking dish that has been lightly oiled with extra-virgin olive oil. Sprinkle ground sea-salt and your favorite all-purpose seasoning on breasts, then add about 2 TBSP of organic chicken broth to dish, cover.

Bake at 380-400 degrees for about 25 minutes, just until the pink is gone and they’re still really juicy.

While chicken is baking:

Cut up tomato or use grape tomatoes, put in bottom of a warm bowl to await hot pasta; you can add olives here as well (I Iike fresh kalamata).

Choose your pasta, cook according to directions.

While pasta is cooking, take one garlic clove, add to a microwave bowl (or you can use a saucepan) with 1/4 to 1/2 C. extra virgin live oil, cook for about 30 seconds to infuse garlic into oil, then squeeze fresh lemon juice into oil. For extra lemon flavor, zest lemon peel into mixture, let sit while everything else is cooking.

Drain cooked pasta, leaving a little of the pasta water in it, pour into bowl hot over tomatoes, add garlic-infused lemon oil, toss.

Top with finely shredded parmesan and chopped basil.

Once chicken is cooked, you can chop it up and mix it with pasta or have it as a side.

Lemon, garlic and olive oil — three of the best foods you can consume in one dish. And let’s not forget the basil, olives and wholesome chicken. Instead of pasta, this can be tossed with romaine lettuce for a healthy salad option.
